Directions

    Grab your chicken thighs, coat them with olive oil and the seasoning blend (see caption for details).

    Use the juice from half a lemon and let these marinate for as long as you can.

    Sear these on both sides until a nice char is achieved, add flavor.

    Remove when internal temp hits 165°F.

    Chop the chicken thighs and set aside.

    For the rice, add the juice of half a lemon, half a lime, a quarter cup of cilantro, salt to taste, and stir.

    Add black beans to the rice.

    Add chopped chicken to the rice and black bean mix.

    Add pico de gallo.

    Add a generous amount of sour cream.

  • 1 tsp cumin
  • 1 tbsp garlic powder
  • 1 tsp ground black pepper
  • 2 tbsp olive oil
  • 1 cup basmati/jasmine rice
  • 2 cups water
  • 0.2 cup cilantro
  • 0.5 lime juice
  • 0.5 lemon juice
  • 1 Monterey Jack cheese
  • 1 Spicy pico de gallo
  • 1 Cilantro
